Recipes from South Carolina

Andre brought back a stack of 4x6 index cards with recipes on them. I thought I'd post them here. Enjoy!

Angelina's Lasagna

Combine these 8 ingredients; mix well. Shape into 14 meat balls.
1 lb ground beef
2 eggs, slightly beaten
1 clove garlic, minced
3/4 teaspoon salt
3/4 cup dry bread crumbs
2 Tablespoons grated Romano cheese
1 teaspoon dried parsley
1/4 teaspoon pepper

In a large skillet, brown meat balls in oil; remove.

5 Tablespoons cooking oil
1/2 onion, diced (optional)
cup (8 oz) tomato sauce
1 teaspoon salt
1/4 teaspoon pepper
6 strips lasagna noodles, cooked & drained
1/2 lb Italian sausage
1 cup (6 oz) tomato paste
1 cup (1 lb, 4 oz) tomatoes
1/2 teaspoon oregano
1/2 lb Mozzarella cheese, thinly sliced

Add sausage meat. Brown and set aside with meat balls. Add onion and cook until golden; remove. Stir tomato paste into oil, blending well. Add tomato sauce, tomatoes, salt, pepper and oregano. Simmer 10 minutes. Slice meat balls. Add to sauce along with sausage meat and onion. Simmer 20 minutes. Grease a 12x8x2 inch baking dish. Pour in enough sauce to cover bottom of dish. Arrange three lasagna strips over sauce. Add about 6 slices Mozzarella cheese.

Ricotta Filling
1 lb Ricotta cheese
1 egg, slightly beaten
2 Tablespoons milk
1 teaspoon dried parsley

Then add half the Ricotta Filling, another layer of sauce. Repeat layering with remaining ingredients. Cover. Bake at 400 F for 45 minutes. Yield: 8 portions.
